How do I make the slow cooked chicken?

Step 1: Toss together all ingredients in a large bowl, add in the chicken, and marinate. (Hardest part, completed. lol)

Step 2: Add the chicken to a large pot to simmer for 1-3 hours.

Step 3: Shred the chicken with two forks, or in a mixing bowl with the whisk attachment.

Voilà!

Thank you Proper Good for partnering with me on this recipe! As always, opinions are my own.

Why use beef bone broth with chicken?

Great question! While you can use chicken bone broth, I find that slow cooking the chicken breasts in Proper Good's Beef Bone Broth adds more depth to the dish and gives you a similar feel to that of cuban pork without all the heavy fats and oils. And the longer you let the chicken marinate, the more flavor is will have after it's been cooked!

What do I serve the shredded chicken with?

Being that the chicken is cuban-inspired, I find it delicious with a fresh citrus salsa, warmed black beans, and cooked basmati rice. For the citrus salsa, I will toss together finely diced mangoes, spring onions, cilantro, lime juice, red onion, salt, and black pepper, to taste. My only tip is to make sure the mangoes are semi-firm for a more crisp texture in the salsa to pair with the tender chicken.

OH! And if there's one thing I can recommend, it's to always serve the chicken with a fresh lime wedge! So much tastiness...

Ingredients

  • 1 cup Proper Good Beef Bone Broth
  • 1 lb. Chicken Breasts, (boneless and skinless)
  • 1 cup Fresh Pineapple, (diced (about 1/4th pineapple))
  • 1/2 cup Fresh Orange Juice
  • 3 Garlic Cloves, (crushed)
  • 1/2 Yellow Onion, (thinly sliced)
  • 1/4 cup Fresh Parsley, (chopped)
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tbsp. Ground Cumin
  • 2 Lime, (juice and zest)
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper

Instructions

  1. In a large bowl, whisk together all ingredients, adding in the chicken breasts last. Transfer the chicken and marinade to an airtight container or sealable bag to refridgerate for 30 minutes to 2 hours. (The longer it marinates, the more flavor it will have.)
  2. Once marinated, add the chicken to a large pot over medium high heat. Bring to a boil, then cover to simmer (slow cook) for at least one hours. The internal temperature should be 165F before serving. Shred the chicken with two forks to desired thickness.
  3. Enjoy with basmati rice, cilantro-lime mango salsa, and black beans for the ultimate cuban-inspired summer meal!
