Step 1: Toss together all ingredients in a large bowl, add in the chicken, and marinate. (Hardest part, completed. lol)
Step 2: Add the chicken to a large pot to simmer for 1-3 hours.
Step 3: Shred the chicken with two forks, or in a mixing bowl with the whisk attachment.

Great question! While you can use chicken bone broth, I find that slow cooking the chicken breasts in Proper Good's Beef Bone Broth adds more depth to the dish and gives you a similar feel to that of cuban pork without all the heavy fats and oils. And the longer you let the chicken marinate, the more flavor is will have after it's been cooked!
Being that the chicken is cuban-inspired, I find it delicious with a fresh citrus salsa, warmed black beans, and cooked basmati rice. For the citrus salsa, I will toss together finely diced mangoes, spring onions, cilantro, lime juice, red onion, salt, and black pepper, to taste. My only tip is to make sure the mangoes are semi-firm for a more crisp texture in the salsa to pair with the tender chicken.
OH! And if there's one thing I can recommend, it's to always serve the chicken with a fresh lime wedge! So much tastiness...
