How to Store Leftover Pancakes:

Either wrap the pancakes in foil or place them in an airtight container. You could also place them in a ziplock bag, placing parchment paper in between each single layer of pancakes (to prevent sticking to one another).

If you have large amounts leftover, wrap them tightly in plastic wrap, place in a freezer-safe bag, and store in them freezer up to 1 month.

How to Reheat Pancakes:

Preheat the oven to 350F. Place the desired amount of pancakes on a baking sheet in a single layer. Cover the pan with foil to prevent them from drying out/burning. Cook for 5-7 minutes, longer time may be needed if frozen.

Ingredients

Servings: 3

  • 1 cup Gluten Free 1-to-1 Baking Flour, or All-Purpose Flour
  • 4 large Eggs
  • 1 ½ cups Cottage Cheese
  • 3 scoops SMOO Ovary Good Unflavored
  • ¼ cup Pumpkin Puree
  • 1 tbsp. Coconut Sugar, or Brown Sugar
  • 1 tbsp. Baking Powder
  • 1 tsp. Vanilla Extract
  • 1 tsp. Pumpkin Pie Spice

Instructions

  1. Heat up a large griddle over medium heat. Grease with olive oil or butter.
  2. Blend all ingredients together until a thick and smooth consistency.
  3. Using ¼ cup butter per pancakes, add the batter to the greased griddle and cook until golden brown on both sides, about 1-2 minutes each side.
  4. Serve warm with bananas, dash of cinnamon, and a drizzle of maple syrup. Enjoy!
