Protein Pumpkin Pie Pancakes (30g+ Protein)

Ingredients

- 1 cup Gluten Free 1-to-1 Baking Flour, or All-Purpose Flour
- 4 large Eggs
- 1 ½ cups Cottage Cheese
- 3 scoops SMOO Ovary Good Unflavored
- ¼ cup Pumpkin Puree
- 1 tbsp. Coconut Sugar, or Brown Sugar
- 1 tbsp. Baking Powder
- 1 tsp. Vanilla Extract
- 1 tsp. Pumpkin Pie Spice
Instructions
- Heat up a large griddle over medium heat. Grease with olive oil or butter.
- Blend all ingredients together until a thick and smooth consistency.
- Using ¼ cup butter per pancakes, add the batter to the greased griddle and cook until golden brown on both sides, about 1-2 minutes each side.
- Serve warm with bananas, dash of cinnamon, and a drizzle of maple syrup. Enjoy!
