  1. Let the steak rest at room temperature for 20-30 minutes.
  2. Season all sides with a splash of the Worcestershire sauce and soy sauce, then the woodfired blend seasoning.
  3. Cook the steaks directly on the hot grill racks for 2 - 3 ½ minutes on each side, or until desired doneness. For medium, you’ll want 145F internal temperature. For medium well, you’ll want 150F. And for well, you’ll want 160F.
  4. Let the steaks rest for at least 6 minutes before slicing.

Ingredients to Make Homemade Crispy Fries:

How to Make Homemade Crispy Fries:

  1. Slice the peeled potatoes into fries. Place in a large bowl of ice cold water to soak for 10 minutes.
  2. Drain the potatoes and pat dry.
  3. Season with ¼ cup black cherry chipotle seasoning and cornstarch. Toss until well coated.
  4. Deep fry in the hot oil for 5-6 minutes, until golden.
  5. Remove with a slotted spoon to drain any excess oil on a paper towel lined wire rack.
  6. Let the fries cool for a few minutes, then toss back into the frying oil for 1-2 more minutes for extra crispiness!
  7. Toss the crispy fries in the remaining black cherry chipotle seasoning.

TIPS for Making the Perfect French Fries at Home:

  • Not all potatoes are created equal, each has it's own amazing purpose. Try to avoid way potatoes, and instead choose russet potatoes or golden Yukons.
  • Soak sliced potatoes in COLD water for at least 20 minutes, preferably 1 hour.
  • Fry in small batches to ensure all sides get crispy fast! You don't want them softening in the oil, because when you add too much the oil temperature will go down.
  • Let fully drain on a paper towel lined wire rack for at least 4-5 minutes before adding back to the frying oil for another 1-2 minutes.

  2. Blend until the herbs are finely chopped.

TIPS for Making this Whole Meal for Dinner:

I find that most times individuals will take only parts of my recipes, such as the chimichurri portion or maybe the crispy fries, but if you are ever so special and making this whole dinner - I have some tips for you to make it perfect!

  1. Start with the chimichurri first. Then, let it sit out at room temperature until ready to serve. Store in them fridge if prepping in advance.
  2. Next up, work on the homemade fries. Fries are best warm and crispy, so you'll want to work smart at this point. After slicing and peeling your potatoes, add to the cold water. They can soak up to 2 hours. So in the meantime, let your steak rest at room temperature and heat up the grill. \
  3. Cook the fries, then keep on 200F for up to 30 minutes.
  4. Grill the steak, and serve everything together warm!

How to Check Your Steak's Temperature Without a Thermometer:

  1. RAW = Feel the palm of your hand, just below your thumb - It's a little soft and fleshy. This is what raw steak should feel like.
  2. RARE = Now bring your thumb to your pointer finger, and touch that same part of your palm again. It's slightly firmer. This is how a  rare steak should feel when you touch the center of it.
  3. MEDIUM-RARE = Touch your thumb to your middle finger. That section of your palm has now tensed up more. This is what medium-rare steak feels like.
  4. MEDIUM = Move your thumb to your ring finger. The palm section may feel slightly flexed This is the level of firmness for medium steak.
  5. WELL-DONE = Now touch your thumb to your pinky. That section of your palm will be mostly firm. This is what well done steak feels like.
