Pan seared salmon tossed in a savory-sweet sticky sauce... Let me introduce my new favorite weeknight dinner: Crispy Ginger Sticky Salmon Bites. This will turn all my salmon haters into lovers.
How to Perfectly Pan Sear Salmon?
Preheat oven to 400F.
Heat up the olive oil in a large skillet over medium high heat for 2-3 minutes, until shimmering and hot.
In the meantime, generously season both sides of the salmon fillets in salt and black pepper.
Add the salmon to sear untouched for 4-5 minutes, until crispy and golden brown along the edges.
Using a spatula to flip the salmon.
Sear another 3-4 minutes.
Transfer the (oven safe) skillet to the oven to finish cooking until opaque in the center, about 5-10 more minutes, depending on the thickness of your salmon fillets.
How to Make Crispy Ginger Sticky Salmon Bites:
Heat up the olive oil in a large skillet over medium high heat for 2-3 minutes, until shimmering and hot.
In the meantime, slice the salmon fillets against the grain into 1" cubes. Season generously with salt and black pepper.
Add the salmon cubes to sear untouched for 2-4 minutes, until crispy and golden brown along the edges.
Using tongs, flip the salmon bites individually (to help them not break apart).
Sear another 2-3 minutes.
Add the minced garlic, ginger, soy sauce, honey, and sesame seeds. Gently stir the crispy salmon bites in the sauce, or use a spoon to baste the salmon bites in the sauce for 1-2 minutes, until salmon is fully cooked.
Serve warm over rice to enjoy!

How to Store Leftover Salmon? How to Reheat?
Do not let the salmon sit out at room temperature for longer than 20 minutes. Store leftover salmon (still warm) in an airtight container in the fridge for up to 2 days.
Reheat in the oven at 400F for 6-10 minutes, or on the stovetop. Enjoy!
