Ep. 8 of my Cozy Soups & Grilled Cheese Series! ⛷ Today, we’re making a Lemon Dill Sardine Melt that is incredibly high in anti-inflammatory omega 3 fatty acids, proteins, antioxidants, & so much more.

Ingredients you'll need to make a Sardine Melt:

  • Sourdough Bread
  • Wild Planet Lightly Smoked Sardines in Extra Virgin Olive Oil, drained
  • Red Onion, finely chopped
  • Cream Cheese, room temp.
  • Fresh Dill, chopped
  • Honey
  • Lemon
  • White Cheddar, or Havarti
  • Butter, softened
  • Salt & Black Pepper, to taste

Lemon Dill Sardine Melt

Ingredients

Servings: 1-2

  • 2 slices Sourdough Bread
  • 1 can Wild Planet Lightly Smoked Sardines in Extra Virgin Olive Oil, drained
  • ¼ cup Red Onion, finely chopped
  • 2-4 oz. Cream Cheese, room temp.
  • 2 tbsp. Fresh Dill, chopped
  • 1 tbsp. Honey
  • Juice of 1 Lemon
  • 2 slices White Cheddar, or Havarti
  • 1 tbsp. Butter, softened
  • Salt & Black Pepper, to taste

Instructions

  1. In a large bowl, combine the drained sardines, finely chopped red onion, softened cream cheese, chopped dill, honey, and lemon juice. Mix well. Season with salt and black pepper to taste. If you prefer the mixture to be creamier, add more cream cheese.
  2. On a slice of sourdough, add the white cheddar slices in a single layer.
  3. Spread a generous layer of the lemon dill sardine mixture. Sandwich with the second slice of sourdough bread.
  4. Butter both sides of the sandwich, then add to a heated griddle over medium heat.
  5. Cook 2-3 minutes on each, until crispy and golden brown. Enjoy warm!
