Crispy Chicken & Spicy Cheddar Focaccia Sandwich
Toasted herby butter sourdough focaccia layered with crunchy parmesan chicken cutlets, a sun-dried tomato spread, caesar salad, and spicy cheddar!
Ingredients

For the High Protein Sundried Tomato Spread:
- 1/3 cup Plain Greek Yogurt
- ¼ cup Sundried Tomatoes
- ¼ cup Fresh Basil
- ¼ cup Olive Oil
- Salt & Black Pepper, to taste
For the Spicy Cheddar Focaccia Sandwich:
- 2 Parmesan Chicken Cutlets (RECIPE HERE)
- 1 large slab Focaccia Bread, or bread of choice
- 2 slices Organic Valley Flavor Favorites Spicy Cheddar
- 2 Parmesan Chicken Cutlets
- 1 cup Romaine Lettuce, chopped
- 1-2 tbsp. Caesar Dressing
- 2 tbsp. Sundried Tomato Spread, or substitute with pesto of choice
- 2 tbsp. Organic Valley Salted Butter, softened
- 1 tbsp. Fresh Chives, chopped
Instructions
To Assemble the Focaccia Sandwich:
- Prepare the parmesan chicken cutlets.
- In a small bowl, combine the softened salted butter and freshly chopped chives. Mix well, then slather evenly on the two focaccia halves.
- Place in the toaster oven or under the broiler for 1-2 minutes, until golden.
- If making the homemade sundried tomato spread, combine all ingredients into a blender and pulse until smooth. Spread evenly over both sides of the toasted focaccia halves.
- Add the parmesan chicken cutlets and sliced spicy cheddar. Place back under the broiler for 1 minute, until melted.
- In a separate bowl, toss the chopped romaine and Caesar dressing. Layer on the chicken cutlets and sandwich with the top half of the focaccia. Enjoy!
