Honey Chipotle Chuck Roast Burnt Ends

These slow smoked Honey Chipotle Burnt Ends made with chuck roast are the juiciest, most tender bites that just fall apart on the fork! They're perfect for a make ahead summer hosting recipe, or easy family dinner.

Ingredients you'll need:

  • 4-5 lbs. Chuck Roast
  • 1 ½ tsp. Salt
  • 1 ½ tsp. Black Pepper
  • 1 ½ tsp. Garlic Powder
  • 2 tbsp. BBQ Rub
  • 3 Chipotles in Adobo Sauce, finely chopped
  • ¼ cup Carolina BBQ Sauce
  • ¼ cup Honey
  • ¼ cup Brown Sugar
  • 2-3 tbsp. Butter

What Meat to Use For Burnt Ends:

Burnt ends are usually made from brisket meat or pork belly meat because they have a 50% fat content. The high fat content allows the meat to slow cook to a tender state without drying out. However, this recipe uses chuck roast for a leaner option!

How to Make Burnt Ends:

  1. Heat up your smoker to 250F.
  2. Cut the chuck roast to 1” cubes.
  3. Season the cubes with the salt, black pepper, garlic powder, and BBQ rub.
  4. Place the cubes onto the smoker racks. Cook with the grill lid closed, spritzing with water every 30 minutes for about 2 hours.
  5. When the internal temperature of the meat reaches 165F, remove from the smoker and add to a casserole tin.
  6. Add the chopped chipotles, bbq sauce, honey, brown sugar, and butter into the aluminum foil tin. Toss to combine, the cover tightly with foil.
  7. Place pack on the smoker to cook until the internal temperature reaches 205F and is very tender, about 30-40 more minutes.
  8. If time allows, let the meat rest 20-30 minutes before serving. Enjoy warm!

TIPS to Make The Best Burnt Ends:

  • Cook LOW and SLOW! Especially with chuck roast, you don't want to cook fast like steak. The slower the meat cooks, the more juicy and tender the meat will be.
  • Season the meat itself well so that the flavor can enhance over the smoking time.
  • Wrap the meat after tossing in the sauce to slow cook another 30 minutes to 1 hour to help the sauce get tacky and stick to the meat.
