Easy Strawberries & Cream Pastries

Whenever I have guests coming over, I love making some sort of sweet treat to snack on. So, today we’re making these flaky Strawberries and Cream Pastries using thawed puff pastry, freshly whipped cream, strawberry jam, and fresh strawberries. A super easy Spring dessert recipe for hosting!

TIPS for Working with Puff Pastry:

I suggest letting the puff pastry thaw in the fridge overnight, or 30 minutes to 1 hour at room temperature, just enough so that you can unfold the layers without them breaking on you. The ticket is to keep the thawed puff pastry very cold.

Heat is the enemy of puff pastry, so if it's warm in your kitchen / outside, I also suggest running your hands under cold water and dusting with flour before handling the puff pastry.

Only roll out the puff pastry when oven is preheated and you are ready to bake.

Ingredients you'll need:

  • Frozen Puff Pastry, thawed
  • Egg, beaten
  • Heavy Whipping Cream
  • Granulated Cane Sugar
  • Vanilla Bean Paste
  • Strawberry Preserves
  • Fresh Strawberries, sliced, for garnishing

Substitutes for Strawberries:

You could truly use any berry or fruit in this recipe. And you could even mix and match the flavors! Here are some suggestions below:

  • Peach Jam & Fresh Peaches
  • Blueberry Jam & Fresh Blueberries
  • Blackberry Jam & Fresh Blackberries
  • Mixed Berry & Fresh Blueberries + Strawberries
  • Apricot Jam + Fresh Blueberries
  • Peach Jam + Fresh Blackberries
  • Apricot Jam + Freshly Sliced Kumquats

How long will Baked Puff Pastry Stay Crisp and Flaky?

Puff pastry is always best fresh from the oven. But if you must bake it ahea of time, let it completely cool before storing in an airtight container at room temperature until ready to serve. It might not be as crisp and flaky, but will still taste delicious. You could also try to reheat it at 350F for 5-6 minutes to get back some of the flakiness!

Easy Strawberries & Cream Pastries

Flaky puff pastries filled with fresh strawberries, jam, and whipped cream for an easy Spring baking recipe!

Ingredients

Servings: 10-12

  • BUBBL’R Pitaya Berry Nect’r, for serving
  • 1 sheet Frozen Puff Pastry, thawed
  • 1 Egg, beaten
  • ¾ cup Heavy Whipping Cream
  • ¼ cup Granulated Cane Sugar
  • 1 tsp. Vanilla Bean Paste
  • ½ cup Strawberry Preserves
  • Fresh Strawberries, sliced, for garnishing

Instructions

  1. Preheat oven to 400F. Line a large baking tray with parchment paper.
  2. Gently roll out the thawed puff pastry sheet on a floured surface to remove any kinks from the packaging.
  3. Slice into 10-12 squares, or 8 rectangles.
  4. Score the edges of each puff pastry to help you press in the centers after baking.
  5. Brush each with the beaten egg, then bake 18-20 minutes, rotating the pan halfway through baking, until a deep golden brown and puffed up.
  6. If needed, use a small, serrated knife to slice along the scored edges then gently press in the centers with your fingers.
  7. Spoon a dollop of strawberry jam into the center of each.
  8. In the bowl of a stand mixer, combine the heavy whipping cream, sugar, and vanilla paste. Beat on medium high speed for 5-6 minutes, until fluffy. Transfer to a piping bag.
  9. Pipe the whipped cream onto the cooled pastries, then garnish with the sliced fresh strawberries to enjoy!
