A festive way to celebrate Christmas morning is with this Chocolate Hazelnut Brioche Star Bread that is easy to make and made with less sugar! For me, it's a nostalgic brioche bread that has nestled it's way into my heart for many more years to come.

How to Make Star Bread in 5 Simple Steps:

  1. Make the brioche dough as normal. No complicated recipes over here!
  2. Let the dough rise.
  3. Divide the dough into 4 equal parts. Roll out each part in a large thin circle.
  4. Layer the dough circles, adding a generous spread of Chocolate Hazelnut in between as you go. Do not add any to the top layer!
  5. Place a 3" diameter circle object in the center, then slice 16 equal pieces. Using both hands twist two pieces outward two times, pinching together at the end. Remove the glass, brush with an egg wash, and bake!

How to MAKE AHEAD Brioche Star Bread for the Morning:

This video blew up on social media and this was THE most common question I received. While I don't recommend shaping the star bread the night before, there are a few things you can do to make ahead the night before!

  • Use Active Dry Yeast instead of Instant Yeast.
  • Work up to Step 5 (the first dough rise).
  • Punch down the risen dough, cover tightly with plastic wrap, and store in them fridge overnight for second rising.
  • In the morning, let the dough sit at room temperature for 20-45 minutes before continuing with the recipe as normal!

How to serve Brioche Star Bread?

The dough itself is pillowy soft and fluffy, so it can be enjoyed on it's own. However, my favorite ways to serve it are with either (1) a dusting of confectioners sugar or (2) a simple sugar glaze. The glaze it great if making in advance because it'll keep it moist for next day!

How to store leftover Brioche Star Bread?

Cover and store leftover star bread at room temperature for 1-2 days, or in the refrigerator for 4-5 days.

Ingredients

Servings: 10

  • 3/4 cup Nucolato Hazenut Chocolate Spread
  • 3/4 cup Warm Whole Milk
  • 3 tbsp. Granulated Cane Sugar
  • 2 1/4 tsp. Instant Yeast
  • 1/4 cup Unsalted Butter, softened to room temperature
  • 1 large Egg
  • 2 1/3 cup All Purpose Flour
  • 1 tsp. Fine Sea Salt
  • 2 Egg Yolks, for egg wash
  • 2 tbsp. Confectioners Sugar, for dusting

Instructions

  1. Heat up the milk in the microwave or over medium-low on the stovetop until warm to touch. Remove from heat and transfer to the bowl of a stand mixer.
  2. Add the yeast and sugar to the milk, lightly whisk, and set aside for 5-10 minutes. The mixture should triple in size.
  3. Add the softened butter and egg. Mix until smooth.
  4. Add the flour and salt. Using the hook attachment, knead for 4-5 minutes, until soft and pliable dough. The goal is to have a very soft dough.
  5. Place the dough in a lightly greased bowl and cover to rise for 1-2 hours in a warm environment, until doubled in size.
  6. Divide the risen dough into 4 equal parts.
  7. On a lightly floured surface, roll out each dough part into a thin 10-12" circle.
  8. Starting with the first circle, add a third of the chocolate hazelnut spread. Spread evenly over the dough. Add the second dough circle, and repeat the process. Do not add any chocolate spread to the last/fourth dough circle.
  9. Place a 3" round object in the center (like a cup).
  10. Using a sharp knife, carefully cut into 16 even strips.
  11. Using both hands, twist two of the pieces away from each other twice. Then, press the two ends together to make a point. The star bread with have 8 total points.
  12. Cover the bread with plastic wrap to rest fro 10-20 minutes.
  13. Preheat oven to 350F.
  14. Lightly beat the two egg yolks. Brush the star bread with the egg wash.
  15. Bake for 20-30 minutes, or until golden brown on top.
  16. Let cool 5-10 minutes before servings. Dust with confectioners sugar and enjoy!
  17. Cover and store leftover star bread at room temperature for 1-2 days, or in the refrigerator for 4-5 days.
