Grilled Bang Bang Chicken Skewers

An easy high protein, low carb family dinner! These Grilled Bang Bang Chicken Skewers are ready in less than 30 minutes and a crowd-pleaser for your next family bbq.

Ingredients you'll need:

  • Chicken Breasts, skinless and boneless, cut into 1" cubes
  • Olive Oil
  • EACH: Paprika, Garlic Powder, Salt, & Black Pepper
  • Mayonnaise (or Full Fat Greek Yogurt)
  • Sriracha
  • Honey
  • Apple Cider Vinegar
  • Soy Sauce
  • Garlic Powder, or 2 Minced Garlic Cloves
  • EACH: Salt & Black Pepper
  • Parsley, for garnishing
  • Wood Skewers, soaked in water for 20-30 minutes

How to Make a Homemade Bang Bang Sauce:

  1. To make the bang bang sauce, combine the mayo, soy sauce, sriracha, honey, vinegar, and garlic powder in a large bowl.
  2. Whisk until smooth, then season with salt and black pepper to taste.

I would make this sauce in large batches because it awesome for kids who don't like meat by itself (or even adults!) It's great for grilled vegetables, seared steaks, chicken thighs, rice, and so on.

The Summer grilling season is right around the corner, or if you live in warmer states, it's a year round pleasure! I love grilling during the warmer months because it doesn't heat up the kitchen, keeps your electricity bill a little lower, and provides ample opportunity for family and friend gatherings without a huge mess.

Ingredients

Servings: 4

  • Equipment: Masterbuilt Gravity Series Grill & Smoker
  • 2 lbs. Chicken Breasts, skinless and boneless, cut into 1" cubes
  • 2 tbsp. Olive Oil
  • 1 tsp. EACH: Paprika, Garlic Powder, Salt, & Black Pepper
  • 1 cup Mayonnaise (or Full Fat Greek Yogurt)
  • 3-4 tbsp. Sriracha
  • 2 tbsp. Honey
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. Soy Sauce
  • 1 tsp. Garlic Powder, or 2 Minced Garlic Cloves
  • 1/2 tsp. EACH: Salt & Black Pepper
  • Parsley, for garnishing
  • Wood Skewers, soaked in water for 20-30 minutes

Instructions

  1. Preheat Masterbuilt grill to 300F.
  2. To make the bang bang sauce, combine the mayo, soy sauce, sriracha, honey, vinegar, garlic powder, and 1/2 tsp. salt & black pepper in a large bowl. Whisk until smooth. Set aside.
  3. In a separate large bowl, combine the chicken, olive oil, and seasonings (paprika, garlic powder, salt, and black pepper). Toss until well coated in the seasonings.
  4. Thread 3-5 pieces of the seasoned chicken onto each wooden skewers. Place the chicken kebabs on a plate to prepare for grilling.  
  5. Place 1/3 cup of the bang bang sauce in a separate bowl, reserving the larger portion for after baking.
  6. Place the chicken skewers on the preheat grill racks to cook 8 minutes, flip, then use the separated 1/3 cup bang bang sauce to brush onto the chicken kebabs.
  7. Cook another 8-10 minutes, until internal temperature reaches 165F and chicken is starting to show char marks.
  8. Enjoy warm with grilled herby potatoes and pickled onions for an easy family bbq dinner!
