What is the difference between Burrata and Mozzarella?
Mozzarella is produced from cow milk's curd, which you achieve by adding lactic ferments and rennet to pasteurized cow's milk. The texture is more elastic and has a more delicate, mild taste.
Burrata (my favorite cheese ever) is softer in texture and more flavorful as its made with more cream from the cow's milk (so also a creamy texture/flavor too).

What is different about Batistini Farms' Italian Balsamic Vinegars?
Each batch is handcrafted using the old traditions, recipes, and mastery involvement of family members of highly skilled artisans in Modena, Italy. Strict consortium guidelines are followed and monitored. The wine grapes are grown in the region and cooked grape must is the most important ingredient but that does not mean a cooked grape must equals a good balsamic. Each handcrafted batch is a “masterpiece” of art meeting demands of ones desiring a higher quality including some James Beard chefs.

Can I make this holiday appetizer in advance?
The beautiful part is that this can be made a day in advance, as long as it's wrapped in Saran Wrap or sealed in a large ziplock bag or air-tight container.
I would recommend not adding the balsamic vinegar until ready to serve though.
