Bacon Ranch Chicken Sliders

These Bacon Ranch Chicken Sliders are a quick and easy dinner that's loaded with juicy chicken, crispy bacon, creamy ranch, cheesy goodness, and fresh scallions!

Homemade Chicken Seasoning Recipe:

  • 2 tsp. Dried Italian Herbs
  • 1 tsp. Garlic Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Paprika, Sweet or Smoked
  • 1/8 tsp. Cayenne Pepper

This seasoning works great for 1 1/2 - 2 pounds of chicken. I recommend starting to double the seasoning amounts as you increase the amount of chicken being cooked.

How to Make Homemade Ranch Dressing:

I love making homemade ranch dressing because it's more flavorful and I can make it lighter (aka not so calorie dense). I love making it with yogurt too so it adds lots of protein. Here is my favorite recipe below!

  • 1 cup Non Fat Plain Greek Yogurt
  • 1/3 cup Buttermilk
  • 1 tbsp. Fresh Chives
  • 1 tsp. Dijon Mustard
  • 1 tsp. Lemon Juice
  • 1 tsp. Each: Garlic Powder, Dried Herbs or Dried Parsley, Ground Black Pepper, & Salt

Simply mix all the ingredients together until smooth and enjoy!

Can these chicken sliders be made ahead of time?

Yes! Sliders are an awesome make ahead meal. I recommend fully assembling them, and then you would wrap them in the baking dish to store in the fridge up to 1 day in advance. When ready to serve, cover the dish in foil to cook at 350F for 10 minutes and uncovered for an additional 10 minutes. The goal here is for the chicken to be warm throughout the sliders.

Ingredients

Servings: 12

For the Seasoning:

  • 2 tsp. Dried Italian Herbs
  • 1 tsp. Garlic Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Paprika, Sweet or Smoked
  • 1/8 tsp. Cayenne Pepper

For the Sliders:

  • 1 12-slice package of Sliders
  • 2 lbs. Chicken Thighs
  • 8 slices Colby Jack
  • 8 strips Bacon, fully cooked and chopped
  • 1/3 cup Green Onions, finely chopped
  • 1/3 - 1/2 cup Ranch, homemade or store bought

Instructions

  1. Preheat oven to 400F.
  2. In a large bowl, add the seasoning mixture to the chicken. Toss or massage the seasoning into the chicken.
  3. Grill or cook the chicken in a cast iron skillet (with 1 tbsp olive oil) until fully cooked, internal temperature reaches 175F.
  4. Let the chicken cool for 5 minutes before chopping into small bite-sized pieces.
  5. Assemble the sliders by adding a single layer of the sliced cheese, then the chopped chicken, spring onions, chopped bacon, and ranch. Add another single layer of cheese, then the top half of the slider buns.
  6. Bake for 10-15 minutes, until the cheese is melted. Enjoy warm!
