Air Fryer Almond Croissants
They're crisp on the edges, and filled with a floral, gooey almond custard on the inside that make you feel as if you're in France!
Ingredients

- Equipment: Cosori Air Fryer (Use code LAUREN20)
- 6 Croissants, sliced in half lengthwise
- ½ cup Shaved Almonds, for garnishing
- 1 cup Fine Almond Flour
- ½ cup Granulated Cane Sugar
- 1 stick Unsalted Butter, softened
- 2 large Eggs
- (Optional) ¼ cup Rum
- Pinch of Salt
TIP: You do not have to make all 6 croissants at once, but can store the extra almond filling for later.
Instructions
- In a food processor, combine the almond flour, sugar, softened butter, eggs, rum, and a pinch of salt. Pulse until smooth.
- Add 2-3 tablespoons of the almond filling on the bottom half of each croissant. Sandwich with the top half, then spread a little more on top to help the shaved almonds to stick.
- Place a sheet of parchment paper on the rack of your air fryer. Place 3 almond croissants on the parchment.
- Bake on 275F for 14-18 minutes, until golden on top and crisp. If in a hurry, bake at 335F for 8-10 minutes, keeping an eye on the croissants to ensure they don’t burn.
- Let the almond croissants rest at least 10 minutes before dusting with powdered sugar to enjoy!
