What is Keen One Quinoa?

Keen One Quinoa began as a class project at the University of Colorado in 2007 - love these kind of stories! Founder Christopher Algea (aka a cash strapped college student at the time) decided that quinoa would be an excellent source of affordable nutrition over those empty calorie dorm foods. So when he was assigned a lass project on new product development, him and his classmates decided to take this every day life change to the next level.

Ingredients

Servings: 1

  • 1 2.5-oz Quinoa Cup (any flavor)
  • 2 cups Spinach
  • 1/4th Avocado, sliced
  • 1/3 cup Cherry Tomatoes, halved
  • 1-2 Eggs, cooked to personal preference (soft boiled, fried, scrambled)
  • 1 tsp. Olive Oil
  • (Optional) Feta Cheese Crumbles, or Nutritional Yeast
  • Fresh Herbs, like parsley, chives, or basil
  • Salt & Black Pepper, to taste

Instructions

  1. Microwave your favorite Keen One Quinoa Cup according to package directions, or add 1/2 cup boiling water to let stand for 8-10 minutes.
  2. Cook your eggs to desired preference.
  3. In a small skillet, heat the olive oil over medium high heat. Add the spinach and cherry tomatoes to cook until tender, about 2 minutes.
  4. Assemble breakfast bowl with the quinoa as the base, then the spinach, cherry tomatoes, sliced avocado, eggs, feta cheese crumbles, and fresh herbs. Add salt and black pepper to taste. Enjoy warm!
