Typically, I'm a sponge cake gal but this easy cake recipe has changed the game. With only 15 minutes or less of prep time, you'll have the BEST Vanilla Olive Oil Cake for this Easter Sunday! I frosted the cake with a meringue buttercream and a drizzle of homemade dulce de leche for added richness - all I can say is that it was greatly enjoyed ;)

The BEST Vanilla Olive Oil Cake

Ingredients

  • 1 3/4 cup All-Purpose or Cake Flour
  • 1/2 tsp. Kosher Salt
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 cup Olive Oil
  • 1 cup Granulated Cane Sugar
  • 2 Eggs (preferably at room temperature)
  • 2 tsp. Vanilla Extract
  • 3/4 cup Buttermilk

Instructions

  1. Preheat oven to 350F. Lightly grease and line a 9" cake pan with parchment paper.
  2. In a large bowl, mix together the flour, salt, baking powder and baking soda.
  3. Using a hand mixer or stand mixer, combine the olive oil and granulated cane sugar to beat on medium high speed for 2 minutes.
  4. Continue beating as you add in one egg at a time. Then, reduce to low speed to add in the buttermilk and vanilla extract.
  5. On low speed, gradually add in the flour mixture to mix until just incorporated (be careful not to overmix the batter).
  6. Pour the cake batter into the prepared cake pan, then bake for 40-50 minutes, until a toothpick inserted into the center comes out clean. Enjoy!
