Easy Lemon Raspberry Cake

Let’s make this gorgeous lemon raspberry cake that has a super soft texture, tart raspberry preserve filling with a sweet raspberry buttercream for the perfect Spring cake recipe!

How to make the Lemon Cake Layers:

  1. Preheat oven to 350F. Generously butter and line the bottom of your cake pans with parchment paper. Use either three 5” cake pans or 2 8” cake pans.
  2. In the bowl of a stand mixer, add the sugar and lemon zest. Use your hands to mix until fragrant. Add the butter and cream for 2 minutes on high speed.
  3. Add the vanilla extract, eggs, buttermilk, and yogurt. Mix until smooth.
  4. In a separate bowl, mix the flour, baking powder, baking soda, and salt together until well-combined. Add to the wet ingredients bowl. Mix just until combined. Be careful not to overmix the batter.
  5. Divide the cake batter evenly between the prepared cake pans. Bake for 22-25 minutes, until a toothpick inserted into the center comes out with moist crumbs and the cake springs back. Let cool in the pans for 10 minutes, then cool completely on a wire rack.

Can you make ahead cake layers?

One of the best tips to making amazing cakes is to make ahead the cake layers a day prior to assembling and serving! It helps to minimize the mess and keeps you from stressing over the cake cooling fast enough to frost.

Let the cake layers cool for 10 minutes in their cake pans, then remove from the pans to cool completely on a wire rack. I usually let it sit out for 1-2 hours. Once cooled completely, you'll wrap them loosely in parchment paper then in Saran Wrap. I recommend storing them on your kitchen counter overnight or in the fridge if not planning to assemble the cake within 24 hours.

You can also freeze your cake layers using the same method as above, then placing in a freezer safe bag. When ready to assemble, let the cake layers defrost in the fridge overnight.

How to make the raspberry buttercream:

  1. In the bowl of a stand mixer, cream the butter and cream cheese until smooth. Add the vanilla extract and whisk 1 more minute.
  2. Add the powdered sugar and whisk until soft and fluffy, about 5-6 minutes.
  3. Add the raspberry preserves, heavy cream, and pink food coloring to preference. Whisk another 2-3 minutes.

5 TIPS for making PERFECT buttercream frosting:

  1. Use room temperature butter.
  2. Use a stand mixer with the paddle attachment to beat the butter, then the whisk attachment when adding the sugar.
  3. Whip the butter until smooth before adding any sugars.
  4. Using the whisk attachment, whip the butter and powdered sugar for a good 5-10 minutes before adding any other ingredients (unless of course you're adding cream cheese. Add the cream cheese with the butter). This creates a super rich, delicate, and fluffy frosting.
  5. Use heavy cream rather than regular milk for perfect consistency.

How to store cakes to keep fresh and flavorful:

  • Store the cake under a cake cover or a large bowls.
  • Freeze frosted cakes in a tightly covered freezer-safe container for up to 3 months. Thaw at room temperature when ready to enjoy again.
  • Cover leftover individual cake slices on a large plate, placing parchment paper sheets in-between each cake slice to keep them from sticking together. Cover with Saran Wrap and store in the fridge up to 3 days.

Ingredients

Servings: 8-10

For the Lemon Cake Layers:

  • 2 ½ cups Cake Flour, or All Purpose Flour
  • 1 ½ tsp. Baking Powder
  • ½ tsp. Baking Soda
  • ½ tsp. Fine Sea Salt
  • ½ cup Unsalted Butter, softened
  • ¾ cup Granulated Cane Sugar
  • 2 tbsp. Fresh Lemon Zest, about 2 lemons
  • 1 tbsp. Vanilla Extract
  • 2 large Eggs, preferably at room temperature
  • 1 cup Buttermilk
  • ½ cup Plain Greek Yogurt

For the Raspberry Frosting:

  • 1 cup Unsalted Butter, softened
  • 4 oz Cream Cheese, softened
  • 1 tsp. Vanilla Extract
  • 5 cups Powdered Sugar
  • ¼ cup Raspberry Preserves, preferably without seeds
  • 2-3 drops Pink Food Coloring
  • 1 tbsp. Heavy Cream

To Assemble:

  • ½ cup Raspberry Preserves
  • Fresh Raspberries, to garnish

  6. To Make the Buttercream: In the bowl of a stand mixer, cream the butter and cream cheese until smooth. Add the vanilla extract and whisk 1 more minute.
  7. Add the powdered sugar and whisk until soft and fluffy, about 5-6 minutes.
  8. Add the raspberry preserves, heavy cream, and pink food coloring to preference. Whisk another 2-3 minutes.
  9. Layer the cooled lemon cake layers with the raspberry buttercream and create a border along the edges of each frosting layer to add ¼ cup of raspberry preserves. Frost the outside of the cake and decorate with fresh raspberries and thinly sliced lemons.
