What better way to celebrate Mother's Day on a Saturday than with homemade breakfast-in-bed? Whether your planning your own brunch or someone else's, these Strawberry Oat Flour Waffles (Mother's Day Inspired) are perfectly fluffy, light, and oh so delicious! Perfect for a relaxing Saturday morning treat.

Can you make these waffles vegan?

Yes! I recommend substituting the two eggs with two flaxseed eggs. To make a flaxseed egg, simply mix 1 tablespoon flaxseed meal with 3 tablespoons water, then allow the mixture to sit in your fridge for at least 15 minutes. If you double that recipe (to make two flaxseed eggs), then the waffles ought to turn out just as scrumptious!

Where did waffles originate?

I always find a food's history to be interesting! There is a long debate on whether waffles originate from France or Belgium since they possibly date back to the 13th century. So, I am gonna leave that debate up to historians!

However, there are still quite a few interesting (historical) facts on waffles:

The first waffle maker (with the classic honeycomb pattern) appeared in the 1200's.

Waffles appeared throughout the streets of Europe with a batter that most resembled a thick, biscuity cake. Instead of sugar, Europeans often used honey to make a most delicate, tasty treat.

In the 1620s, the Dutch brought "wafles" with them on their voyage to America.

In 1789, Thomas Jefferson returned back to the USA from France with an abundance of French recipes, including a long-handled waffle iron to make the most crispy, tasty waffles.

How to celebrate Mother's Day with simplicity?

Most mothers simply want to be shown appreciation and true love from their family for all the hard work over the year(s). Maybe bring them their favorite bouquet of flowers, give her the day off from house chores and cooking, make a card that has your favorite memories with her written inside and maybe attach a few printed out photos. Strawberry Oat Flour Waffles (Mother's Day Inspired)

Ingredients

  • 2 cups Oat Flour ((you could also simply blend rolled oats in a food processor until flour-like texture))
  • 3 tbsp. Maple Syrup
  • 2 large Eggs
  • 1 tsp. Vanilla Extract
  • 1 tbsp. Olive Oil
  • 1 cup Almondmilk or Regular Milk
  • 1 tsp. Ground Cinnamon
  • 1.5 tsp. Baking Powder
  • Pinch of Salt

Instructions

  1. Lightly grease and heat up your waffle maker (according to its directions).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. Create a large well in the center of the flour mixture, then add in the maple syrup, vanilla extract, olive oil, almondmilk, eggs, and ground cinnamon.
  4. Whisk the ingredients inside the well, then whisk the batter all together until combined.
  5. Use 1/4 cup of the batter per waffle. Cook according to your waffle maker's directions.
  6. Serve alongside fresh strawberries (quartered), dust with powdered sugar, and drizzle with maple syrup. Enjoy!
