This Spicy Italian Chicken, Arugula, & Heirloom Tomato Ciabatta Sandwich is an easy lunch recipe that will keep you satisfied and energized until dinner!

What makes Bilinski's different from other sausage brands?

Since 1929, Bilinski's has been in the meat industry with a variety of products, striving to better food for a better world. A few years in they decided to perfect their chicken sausages and solely focus on them (understandably so since they're SO good!).

Their chicken sausages are low in fat and high in protein while being environmentally conscious. They are made solely with chicken so ZERO pork, casings, etc. They are also proudly female owned and operated - how cool! 

How are Bilinski's chickens raised?

Their chickens have always been raised humanely and respectfully, given plenty of natural sunlight and space to roam about on the farms. They are never treated with growth hormones nor antiobiotics, so they can grow at natural rates and live healthy, happy lifestyles! 

What kind of casing do Bilinski's sausages have?

(One of my favorite parts about Bilinski's!) They have NO CASING - so there is no pork casing to remove!

Can I meal prep sandwiches without them going soggy?

For this sandwich in particular, you can meal prep up to 24 hours in advance without it going soggy. BUT please be sure to follow the order of layering in the instructions. The key to sandwiches not becoming soggy is making sure any "water-y" ingredients (like tomatoes) are layered in the middle between more solid ingredients (like cheese, meat, lettuce).

Ingredients

Servings: 4

  • 5 Bilinski's Organic Spicy Italian with Red Pepper Chicken Sausages
  • 1 large Ciabatta Loaf, or 4 individual ciabatta loaves
  • 2 cups Arugula
  • 2 tbsp. Garlic Aioli
  • 2 large Heirloom Tomatoes, thinly sliced
  • 4 slices Provolone or Mozzarella Cheese
  • 1/3 cup Fresh Basil Leaves, slightly chopped

Instructions

  1. Heat up the spicy Italian chicken sausages over medium high heat until fully warmed, about 5-8 minutes.
  2. Slice the ciabatta loaf in half lengthwise.
  3. Slather an even layer of the garlic aioli on the bottom slice.
  4. Add the arugula.
  5. Add the thinly sliced heirloom tomatoes.
  6. Slice the cooled down Italian chicken sausages in half lengthwise, then add to the sandwich.
  7. Add the sliced cheese and basil. Top with the last bread slice.
  8. Slice the sandwich into 3-4 sandwiches to serve. Enjoy!
