Creamy Italian Lemon Chicken

·

This Creamy Italian Lemon Chicken is simple, but full of flavor! The creamy lemon sauce compliments the tender, browned chicken for a satisfying dinner when paired with pasta!

My family are huge chicken and pasta fans. And when it comes to wanting a flavorful dinner that can be whipped up in 20 minutes or so, this is our go to. You can add the chicken to just about any leftover rice, potatoes, or pasta from the night prior and it's so satisfying!

What to serve with the Creamy Italian Lemon Chicken?

  • Pasta (my favorite choice! See why below)
  • Basmatic Rice
  • Roasted Potatoes
  • Crispy, Browned Hashbrowns (sounds strange, but trust me it's good!)
  • Dinner Rolls
  • Italian or Greek Salads (look up 'Olive Garden Copycat Salad' if in need of a new salad recipe!)

What is Batistini Farms?

Batistini Farms is a family-operated and owned company (aka my family's business hehe). My parents love working closely with our small family farmers in the countrysides of Italy (that have become close friends over the years). They offer award-winning extra virgin olive oil, balsamic vinegars, ancient Tuscan grain pastas, herbs, Cerignola olives, and more! Rooted in family to produce high quality Italian products!

What makes their 100% Extra Virgin Olive Oils different?

Every single olive oil is handcrafted from fresh organic olives and cold extracted within 24 hours of harvest. The olives are grown in rich soil, sustainable farming practices, and pruning techniques that yield thriving terroir from their family estate olive grove.

The difference? It is the most fresh olive oil you'll ever taste! They provide a dark bottle to keep the olive oil from spoiling and a harvest date to keep you informed that you have the most recent olive oil harvest! In every bottle of Batistini Farms' olive oil, you'll be able to explore the fruitiness, green leaves, almonds, herbs, etc. with a bittersweet tingling piquant finish that is signature to a true, authentic 100% extra virgin olive oil.

What is Ancient Tuscan Grain Pasta? And why is it healthier than normal pasta?

Batistini Farms' Ancient Tuscan Grain Pastas are stone milled, slow dried the traditional way, and bronze drawn on a single Tuscan estate. It's packed with natural nutrition and is BY FAR the most amazing whole grain pasta taste!

It begins with harvesting of organic select grains, stone milling the seeds to flour, and then crafting the dough, cutting it by bronze, and patiently waiting for the slow drying of the pasta to keep with the old traditions.

Where can I find Batistini Farms?

You can shop online at www.b-farms.com, or click here, to shop all their products. They also have a limited selection of the 100% Extra Virgin Olive Oils and Balsamic Vinegars available in Whole Foods Market across the East Coast!

What is Piccata Sauce Made of?

This sauce is often referred to as a chicken piccata sauce. But what makes this sauce so special? The sauce is very simple, light, bright with fresh lemon, and absolutely addicting. It's typically made with chicken broth or wine, butter or olive oil, lemons (of course lol), and capers (which are skipped today).

You may also find restaurants or home cooks making the sauce *chefs kiss* by adding shallots, tomatoes, mushrooms, or garlic (which we did!).

Now, it’s time to grab our aprons and begin baking deliciousness! ’till next time! xxL

Instructions

  1. Slice each chicken breasts lengthwise into two thin cutlets. If needed, place the (total of 4) cutlets in a ziplock bag and slightly pound with a meat mallet to even out the thickness.

  4. Cook for 4-5 minutes on each side, or until golden brown and crispy (and internal temperatures of 165F - fully cooked). Transfer to a plate.
  5. In the same skillet, add the remaining olive oil and minced garlic to sauté for 1 minute. Add the remaining ingredients, whisking until well combined.
  6. Bring to a boil, then reduce heat to a simmer. Add the chicken back into the skillet to simmer for 10-12 minutes (the sauce should thicken up).
  7. Garnish with fresh parsley and lemon slices. Season with salt and black pepper to taste. Enjoy warm!
