How to make homemade ravioli?
Making homemade ravioli is a lot simpler than you're probably thinking!
Mix the flour and salt together on a clean surface or in a large bowl.
Create a well in the center to add the beaten eggs (and beet puree for natural pink color).
Knead until a smooth and elastic pasta dough, about 4-6 minutes.
Wrap the pasta dough in plastic wrap and set aside at room temperature for 20 minutes.
In a large bowl, combine the filling ingredients.
Divide the pasta dough into 2 parts.
Roll each portion on a lightly floured surface to 1/16” thickness.
Working quickly, place rounded teaspoons of the filling 1” apart over half of each pasta sheet.
Fold over the pasta sheet and press down slightly to seal.
Use a sharp knife or a heart-shaped cookie cutter to make your heart-shaped ravioli.
Bring a large pot of salted water to a boil. Add the pasta and cook 1-2 minutes, until it floats to the top.
How to make ahead homemade ravioli?
You can work up to 2 different points:
The first stopping point is once you've made the dough itself. Let it rest (as instructed in Step 2 in the recipe details below) then store in the fridge up to 2 days in advance. When ready to roll out, let it come to room temperature for about 20 minutes before rolling.
The second stopping point is after you've assembled the ravioli. I recommend storing them by placing a sheet of parchment paper on the bottom of a large storage container, dusting with a little flour, and adding a single layer of ravioli. Repeat the process until you've store all ravioli, making sure the parchment paper separates each layer to prevent sticking. Store in the fridge up to 3 days in advance!

How to store and reheat leftover ravioli?
Store leftover NOT COOKED ravioli in an airtight container in single layers, separating each layer with parchment paper and dusting with a little flour to prevent sticking. If COOKED, you can store the ravioli in an airtight container without the parchment and flour.
To reheat cooked leftover ravioli, add a little water to a microwave safe container with the ravioli and cooke in 30 second intervals. If using the stovetop, add a little water with the ravioli and steam for 2-3 minutes.

2 cups Flour
1-2 tbsp. Beet Puree
1 tsp. Salt
For the Filling:
1 cup Ricotta
¼ cup Parmesan, freshly grated
