These Healthier Olive Oil Cut-Out Sugar Cookies are made healthier with olive oil, soft and insanely delicious and they hold their shape beautifully!

How to make cut-out sugar cookies with oil instead of butter?

The only noticeable difference between sugar cookies made with olive oil is that they may not be as chewy as cookies made with butter. However, I have given these cookies to MANY people as gifts and they had NO CLUE they were made with olive oil. So if you have any hesitations, hopefully that'll squash them! Lol

  1. Beat together the olive oil, sugar, egg, vanilla extract, and orange zest.
  2. In a separate bowl, mix the flour and baking powder.
  3. Fold together the flour mix and the eggs mix.
  4. Let the dough rest at room temperature.
  5. Roll out the cookie dough in-between two large pieces of parchment paper.
  6. Cut out cookie shapes.
  7. Bake for 10-15 minutes.
  8. Decorate and enjoy!

How to decorate cut out sugar cookies?

  • Royal icing
  • Buttercream

How to make Royal Icing?

  • 4 cups Confectioners' Sugar
  • 3 tbsp. Meringue Powder
  • 9-10 tbsp. Room Temperature Water
  • Gel Food Coloring
  1. Add the confectioners' sugar, meringue powder, and water into a large bowl. Mix on medium low speed for 2 minutes.
  2. If it's too thick, add 1 tbsp. more water at a time. If it's too thin, add more sugar. Fold in the food coloring. Transfer to piping bags to decorate.

How to know if the Royal Icing is at the right consistency?

When lifting the whisk up from the icing, the icing should drizzle down and smooth out within 5-10 seconds.

The royal icing usually takes 1-2 hours to dry at room temperature.

Ingredients

Servings: 12-14 cookies

  • 3/4 cup Batistini Farms' Organic Notes 100% Extra Virgin Olive Oil, or Organic Lemon Olive Oil
  • 1/2 cup Granulated Cane Sugar
  • 1 large Egg
  • 2 tsp. Vanilla Extract
  • Zest of 1 Orange
  • 2 cups All Purpose Flour
  • 1 1/2 tsp. Baking Powder

Instructions

  1. Add the olive oil, sugar, egg, vanilla extract, and orange zest into the bowl of a stand mixer. Beat for 5 minutes, or until well incorporated.
  2. In a separate bowl, mix together the flour and baking powder.
  3. Add the flour mixture to the olive oil mixture, folding with a rubber spatula until all the flour is absorbed and well combined.
  4. Let the dough rest at room temperature while you preheat the oven to 350F.
  5. Roll out the cookie dough in-between two large pieces of parchment paper until 1/4" or 1/2" thick (thicker = softer cookies).
  6. Using your favorite cookie cutter shapes, cut out the dough and carefully place them 1" apart on a sheet pan lined with parchment paper.
  7. Repeat until all dough has been used.
  8. Bake for 10-15 minutes, or until set (thinner = less cooking time). Allow to cool completely before decorating. Enjoy!
