These Confetti Birthday Cake Cookies look as if a party has bursted on them! They are so festive and are slightly hard to resist when they sit out on your kitchen counter! They are such a fun alternative to baking a birthday cake and would be absolutely adorable at a little kid's birthday party! Or honestly any birthday party, when they taste as good as these guys!

s you can probably see from the picture above, these are not your normal crunchy cookies. They are even better, because they are almost like mini confetti birthday cakes! They are light and fluffy and nostalgic all in one single bite.

So here's where you can have fun with it... if you prefer a traditional, crunchy and chewy cookie, than I recommend scooping up about ~1/4 cup of cookie batter, place on pan with parchment paper, and then use your finger to swirl the batter out, so that it is pretty thin and wide. These cookies tend to rise up more than they will rise outward, so if your going for a crunchier cookie than your gonna have to spread out the cookie batter so that it won't rise as high.

On the other hand, if you prefer them to be more birthday-cake-like, than form tall cookie batter sized pieces on the parchment paper. When I say "tall" I recommend that you try to roll ~1/4 cup cookie batter in your hands so that it shapes a circular rectangular shape. I hope this is making sense!

All the festive colors from the sprinkles don't nearly show up as well in the photos. Every time myself or someone in my family goes into the kitchen, these colorful cookies tend to bring a smile to our faces. Therefore, I recommend buying the most vibrant sprinkles and/or coarse sugar that you can find!

Even if it is not your birthday, it is always someone else's birthday. Therefore, these Confetti Birthday Cake Cookies are always acceptable to bake, because it is always another day to celebrate life! And oh how precious is life!!

Ingredients

  • 1 cup Granulated Cane Sugar
  • 1/2 cup Extra Virgin Olive Oil
  • 2 Eggs, (at room temperature)
  • 2/3 cups Buttermilk, (you can also substitute with whole milk)
  • 3 cups Flour
  • 2 tsp. Baking Powder
  • pinch of  Sea Salt
  • 1 tbsp. Vanilla Extract
  • 1 tsp. Almond Extract
  • 1/2 cup Sprinkles (+ more for sprinkling on top of each cookie)

Instructions

  1. Preheat oven to 400F.
  2. In a small bowl, whisk together the sugar and extra virgin olive oil. 
  3. Add the vanilla extract, almond extract, and sea salt into the same bowl. Whisk until evenly distributed. 
  4. Add in one egg to the same bowl and whisk until fully incorporated into the batter. Repeat with the other egg. 
  5. In a separate bowl, whisk together the flour and baking powder. 
  6. Working with the sugar mixture, alternate adding in the buttermilk and flour mixture, until incorporated. Be careful not to over mix the batter! 
  7. Using a spatula, fold the sprinkles into the batter. 
  8. Line a pan with parchment paper. Roll ~1/4 cup cookie batter into a tall, log-like shape. Place it standing upwards on the parchment paper. Leave about 1" of space or more in between each cookie. 
  9. Garnish each cookie with plenty of sprinkles to cover the batter. 
  10. Bake the cookies 8-10 minutes.
  11. Allow them to cool on a wire rack. Enjoy!
