A high protein dinner packed with omega 3s, antioxidants, and ready in under 20 minutes!

Ingredients

Servings: 2

  • 2 Salmon Fillets, sliced into 1" cubes
  • 1 tsp. EACH: Salt + Black Pepper
  • 2 tbsp. Olive Oil
  • 1/3 cup Low Sodium Soy Sauce
  • 2 tbsp. Honey
  • 1" Fresh Ginger, minced
  • 2 Garlic Cloves, minced
  • 2 tsp. Sesame Seeds
  • (Optional) Cooked Basmati Rice, for serving
  • (Optional) Edamame, for serving
  • (Optional) Sliced Avocado, for serving

Instructions

  1. Heat up the olive oil in a large skillet over medium high heat for 2-3 minutes, until shimmering and hot.
  2. In the meantime, slice the salmon fillets against the grain into 1" cubes. Season generously with salt and black pepper.
  3. Add the salmon cubes to sear untouched for 2-4 minutes, until crispy and golden brown along the edges.
  4. Using tongs, flip the salmon bites individually (to help them not break apart).
  5. Sear another 2-3 minutes.
  6. Add the minced garlic, ginger, soy sauce, honey, and sesame seeds. Gently stir the crispy salmon bites in the sauce, or use a spoon to baste the salmon bites in the sauce for 1-2 minutes, until salmon is fully cooked.
  7. Serve warm over rice to enjoy!
