If you've been around since the beginning of ABM, then you know my love for Lifeway Kefir continues to grow! From baking the fluffiest, moist cakes to creamy breakfast smoothies and crispy chicken nuggets, their kefir is PHENOMENAL!
Lifeway Kefir is a tart and tangy cultured milk that is high in protein, calcium and vitamin D. Thanks to our exclusive blend of kefir cultures, each cup of kefir contains 12 live and active cultures.
Kefir is one of the healthier fermented foods that tastes similar to drinkable yogurt as it's traditionally made from dairy milk, but there's also non-dairy options available!
Studies suggest that kefir may boost your immune system, aid in digestive problems, improve bone health, and may even combat cancer.
Lifeway Kefir is available in most retail grocers like Whole Foods Market, Sprouts, Food Lion, Harris Teeter, Public, Fresh Market, etc.
Which is awesome for on-the-fly baking excursions 😂
Back to making the chicken nuggets ...
Step 2: Fold in the whisked egg.
Step 3: Make the flour mixture (flour, paprika, salt, garlic powder, powdered sugar, and black pepper).
Step 4: Combine both the chicken (strained) and the flour in a gallon-size ziplock bag. Toss to coat the chicken in the flour.
Step 5: Fry in small batches until golden brown and crispy, about 3-5 minutes.
Step 6: *Very Important to Keep the Crispy Texture* Using a slotted spoon, transfer chicken nuggets to a wire rack lined with dry paper towels.

How to make a Honey-Mustard Dipping Sauce:
Whisk together 4 simple ingredients (mayonnaise, honey, dijon mustard, apple cider vinegar).
Season with salt and black pepper to taste.
Can you make gluten free chicken nuggets?
Yes! I would recommend using almond flour, although you won't get the same texture, the flavor will still be amazing.
How to reheat chicken nuggets?
Preheat oven to 350F.
Spread evenly on a baking sheet covered with parchment paper.
Reheat chicken nuggets for 10 minutes, or until warm/tender.

“"For I know the plans I have for you," declares the Lord, "plans to prosper you and not to harm you, plans to give you hope and a future.” ~ Jeremiah 29:11 NIV
1 lb. Chicken Breast, boneless and skinless, cut into 1" cubes
1 Egg, beat
1/2 cup Lifeway Kefir
1/2 cup Dill Pickle Juice
1 1/4 cup All Purpose Flour
1 tbsp. Powdered Sugar
1 tsp. Each: Paprika, Salt, Black Pepper
For the Dipping Sauce:
1/4 cup Mayonnaise
3 tbsp. Spicy Brown Mustard
3 tbsp. Honey
2 tbsp. Apple Cider Vinegar
Salt & Black Pepper, to taste
Instructions
For the Dipping Sauce:
Simply whisk all ingredients together, adjusting to taste. Set aside in the fridge until ready to use.
For the Chicken Nuggets:
In a large bowl, toss together the chopped chicken, kefir, and pickle juice. Cover and set aside in the fridge for 20-40 minutes.
In the meantime, make the flour mixture by mixing together the flour, powdered sugar, paprika, salt, and black pepper. Transfer the flour mixture to a gallon-sized ziplock bag. Set aside.
Add the beaten egg into the chicken bowl, stirring until well-combined.
Using a slotted spoon, transfer the chicken (without the excess liquids) to the ziplock bag.
Shake the bag well to every coat the chicken.
Heat up a frying pan with olive oil over medium high heat.
Once heated, fry the chicken in small batches for 4-6 minutes, then use a slotted spoon to transfer to a wire rack lined with parchment paper.
Let cool for 2-3 minutes, then enjoy warm with the dipping sauce!
