Air Fryer Sweet Spicy Cheesy Corn Bites

These Air Fryer Sweet Spicy Cheesy Corn Bites are an easy to make appetizer that can be done with both frozen and fresh corn, making it perfect going into the holiday season!

Can they be oven baked and not air fryer?

Absolutely! And in fact, they will have a more even golden bake to them when you do. I recommend brushing them in olive oil prior to baking at 375F for 8-15 minutes, flipping halfway through, until golden brown and crispy.

Troubleshooting:

  • If you don't have enough time to make all the wonton wrappers or are having difficulty sealing them together, I would recommend simply placing a second wonton wrapper on top of the first. You would then seal it together to be a square instead of a triangle. Makes life a little easier!

Add more flavor by:

  • Sauce the corn with some bacon for added depth to the flavor!
  • Toss into the filling more freshly chopped herbs like oregano, thyme, and dill.
  • Brush each sealed corn bite with olive oil prior to baking.

Ingredients

Servings: 20

For the Sauce:

  • 1/3 cup Soy Sauce, Low Sodium
  • 1/3 cup Honey
  • 1 tbsp. Olive Oil
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. Grated Ginger
  • 1 Garlic Cloves, grated
  • Salt & Black Pepper, to taste

For the Corn Bites:

  • 20 Wonton Wrappers
  • 1/2 cup Mozzarella Cheese, shredded
  • 1 1/2 cups Corn Kernels, fresh or frozen (thawed)
  • 1/3 cup Plain Greek Yogurt
  • 1/2 cup Fresh Basil Leaves, finely chopped
  • 1 tbsp. Honey
  • 1 tbsp. Soy Sauce, Low Sodium
  • 1 tsp. Chili Pepper Flakes

Instructions

  1. For the Sauce: Mix all ingredient together in a saucepan over medium heat. Bring to a boil then simmer 5 minutes. Set aside.
  2. For the Filling: Toss together the corn kernels, yogurt, chopped basil, honey, soy sauce, and chili pepper flakes. Season with salt and black pepper to taste.
  3. To Assemble: Using your finger, apply a little water to all edges of the wonton wrapper. Add 1-2 teaspoon size amount of the corn filling. Add a few shreds of cheese. Fold the wonton wrapper over and press down on the edges to seal together. Repeat with remaining wonton wrappers.
  4. To Bake: Place in a single layer in the air fryer to bake at 375F for 6-10 minutes, flipping halfway through, until crispy and golden brown. the baking time may vary depending on air fryers.
  5. To Serve: Toss the corn bites in the warm sauce before serving. Enjoy!
