(Meal Prep) Cabbage Roll Chopped Salad

If you're looking for a light and healthy lunch meal prep that isn't boring, then you'll love this Cabbage Roll Chopped Salad that's high in fiber, antioxidants, and so delicious with crunchy tortilla chips!

Ingredients you'll need:

  • BUBBL’R Wild Cherry Chill’r, for serving
  • (Optional) Rice Vermicelli Noodles, cooked and drained
  • ½ Green Cabbage, thinly sliced
  • ½ Red Cabbage, thinly sliced, or replace with the remaining half of green cabbage
  • 1 English Cucumber, thinly sliced
  • 1 Red Bell Pepper, thinly sliced
  • 3 Carrots, peeled and thinly sliced
  • 1 ripe Avocado, diced
  • 1/3 cup Pickled Onions
  • 6 tbsp. Creamy Almond Butter
  • 2 tbsp. Lemon Juice, or lime, freshly squeezed
  • 1 tbsp. Maple Syrup
  • 5-6 tbsp. Water
  • Salt & Black Pepper, to taste

How to Make a Cabbage Roll Salad:

  1. In a large bowl, toss the thinly sliced cabbages, cucumber, pepper, carrots, avocado, and pickled onions until well mixed.
  2. In a smaller bowl, mix the almond butter, lemon juice, maple syrup, and water until smooth. Season with salt and black pepper to taste.
  3. Divide the chopped salad between your containers, then toss in the dressing when ready to serve. And enjoy with BUBBL’R Wild Cherry Chill’r for a complimentary refreshment!

How to Store Cabbage Roll:

Store in airtight containers the firdge up to 3-4 days.
