(Meal Prep) Cabbage Roll Chopped Salad
A light and healthy lunch meal prep that is high in fiber and antioxidants!
Ingredients
Servings: 4
- BUBBL’R Wild Cherry Chill’r, for serving
- (Optional) Rice Vermicelli Noodles, cooked and drained
- ½ Green Cabbage, thinly sliced
- ½ Red Cabbage, thinly sliced, or replace with the remaining half of green cabbage
- 1 English Cucumber, thinly sliced
- 1 Red Bell Pepper, thinly sliced
- 3 Carrots, peeled and thinly sliced
- 1 ripe Avocado, diced
- 1/3 cup Pickled Onions
- 6 tbsp. Creamy Almond Butter
- 2 tbsp. Lemon Juice, or lime, freshly squeezed
- 1 tbsp. Maple Syrup
- 5-6 tbsp. Water
- Salt & Black Pepper, to taste
Instructions
- In a large bowl, toss the thinly sliced cabbages, cucumber, pepper, carrots, avocado, and pickled onions until well mixed.
- In a smaller bowl, mix the almond butter, lemon juice, maple syrup, and water until smooth. Season with salt and black pepper to taste.
