Mini Crispy Spicy Tuna Sushi Tacos

A new favorite snack unlocked: (Air Fryer) Crispy Mini Spicy Tuna Sushi Tacos 🌮  They're a both a kid-friendly and fun snacking recipe that's high in protein!

Today, we're using Ocean's Halo Sea Salt Seaweed Snacks that are now plastic free to help reduce plastic waster, reduce emissions, and more convenient for everyday snacking!

Ingredients you'll need:

  • Ocean’s Halo Seaweed Sea Salt or Wasabi Snack
  • Canned Tuna, or Canned Salmon, drained
  • Sriracha
  • Japanese Mayo
  • Uncooked Sushi Rice
  • Water
  • White Rice Vinegar
  • Olive Oil
  • Sesame Seeds, for garnishing
  • Sliced Avocado, for garnishing
  • Chives, for garnishing

Troubleshooting / TIPS:

  • Line up against each other in the air fryer. I find it easier to place my sushi tacos back-to-back in the air fryer to hold their shape while cooking for at least the first 6 minutes. Then, once they can hold their shape, I will gently separate them to air fryer with space in-between for another few minutes (or until desired crispiness). My brother prefers them not as crispy, so they don't need to be super crispy!
  • Use wet fingers to press the sushi rice on the seaweed wrap. I recommend keeping a small bowl of cold water nearby to keep the rice from sticking to your fingers.

Ingredients

Servings: 3

  • 2 packages Ocean’s Halo Seaweed Sea Salt or Wasabi Snack
  • 5 oz. Canned Tuna, or Canned Salmon, drained
  • 1 tbsp. Sriracha
  • 1 ½ tbsp. Japanese Mayo
  • ½ cup Uncooked Sushi Rice
  • ½ cup + 2 tbsp. Water
  • 1 tbsp. White Rice Vinegar
  • 2 tbsp. Olive Oil
  • Sesame Seeds, for garnishing
  • Sliced Avocado, for garnishing
  • Chives, for garnishing

Instructions

  1. Drain the sushi rice very well, until the water almost runs clear.
  2. If time allows, let the rice and water soak in a medium saucepan for 20-30 minutes.
  3. Bring the water to a soft boil, the cover to simmer 16-18 minutes. Let steam covered for another 10 minutes, then stir in the rice vinegar and season with salt to taste.
  4. Add 1-2 tbsp. cooked sushi rice onto each seaweed snack. Wet your fingertips to gently press and spread it out on the seaweed snack.
  5. Fold to a taco-like shape. Repeat with the remaining sushi rice and seaweed snacks, then line up in the air fryer on the crispier rack. Drizzle with the olive oil.
  6. Bake in the Air Fryer at 385F for 8-12 minutes, until crispy and golden.
  7. In a large bowl, combine the drained tuna, sriracha, and mayo. Season with salt and black pepper to taste. Mix well.
  8. Spoon a small dollop onto each sushi taco, the garnish with more sriracha, avocado slices, sesame seeds, and chopped chives to enjoy!
