Wine Braised Beef & Goat Cheese Crostini

Gently braised beef in a rich red wine sauce and mushrooms served with creamy goat cheese on top of golden and crunchy crostini. I'm calling this crostini THE appetizer recipe of the Fall season!

Ingredients

Servings: 8+

To Braise the Beef:

  • 3-4 lb. Chuck Roast, sliced into 3-4" pieces
  • 1 tbsp. EACH: Salt + Black Pepper
  • 3 tbsp. Olive Oil
  • 1/2 Sweet Onion, finely diced
  • 1 lb. Cremini Mushrooms, thinly sliced
  • 2 tbsp. Tomato Paste
  • 3 Garlic Cloves, thinly sliced or minced
  • 2 Bay Leaves
  • 2 tbsp. Fresh Thyme Sprigs
  • 3 cups Red Wine
  • 1 cup Beef Stock

To Make the Crostini:

  • 1-2 large Baguettes, sliced into 1/2" pieces
  • 2 tbsp. Olive Oil
  • 1 Garlic Clove, whole
  • 6 oz. Goat Cheese

Instructions

To Braise the Beef:

  1. Preheat oven to 350F.
  2. Heat up a large deep skillet (oven-safe) over medium high heat with the olive oil.
  3. Season the chuck roast with the salt and black pepper on all sides.
  4. Add the seasoned chuck roast pieces to the heated skillet to sear for 2-3 minutes untouched on each side, until well-browned.
  5. Add the sliced mushrooms, diced onions, garlic, and tomato paste. Try to stir all ingredients together best you can.
  6. Add the bay leaves, thyme sprigs, red wine, and beef stock.
  7. Cover the skillet with a lid and transfer to the preheated oven to finish cooking for 2 to 2.5 hours. The meat should shred very easily with two forks when ready.

To Make the Crostini:

  1. Preheat the oven to BROIL.
  2. Slice the baguette into 1/2" slices, place on a large sheet pan. Drizzle the olive oil over the crostini.
  3. Broil for 1-3 minutes on each side, until lightly golden.
  4. Rub one side of the crostini with the whole garlic clove.
  5. Spread a generous slather of the goat cheese over each crostini.
  6. Add the shredded beef on top and garnish with fresh thyme leaves to enjoy!
