Easy Fried Mac N Cheese Bites
You got the creamy cheesy goodness on the inside, and crunchy breadcrumb exterior for a Super Bowl win. It's a one-bowl, quick and easy appetizer!
Ingredients

- 2 cups Vegetable Oil, for frying
- 3 cups Mac N Cheese, homemade or store-bought
- 1/2 cup Bubbies Naturally Fermented Sauerkraut, chopped
- 1 1/2 Panko Breadcrumbs, regular or Italian style
- 1 cup Flour
- 2 large Eggs, whisked
- Fresh Chives or Parsley, chopped, for serving
- Parmesan, grated, for serving
Instructions
- In a large bowl, stir together the prepared macaroni and cheese and chopped sauerkraut. Freeze for 5-10 minutes, or until firm enough to form balls.
- Using a cookie scoop, roll the macaroni and cheese mixture into 1 - 1.5" balls. Makes about 12-14. Place on a baking pan lined with parchment paper. Freeze 20-25 minutes.
- Heat the oil in a large dutch oven over medium high heat.
- Place the panko breadcrumbs in a medium sized bowl, the flour in a separate bowl, and then finally the whisked eggs in another.
- Working one at a time, dip the balls into the flour, then the eggs, and dredge in Panko breadcrumbs to evenly coat.
- Fry the bites in small batches until evenly golden brown and crispy, turning them over halfway through if needed, about 3-4 minutes.
- Transfer them to a wire rack lined with paper towels to drain any excess oil.
- Garnish with fresh chives and grated parmesan, then serve warm. Enjoy!
