Detox Lemon Chicken & Vegetable Soup
Packed with metabolism-boosting protein, vitamin C-rich kale and lemon juice, probiotic sauerkraut, inflammation-battling mushrooms, and antioxidant-packed garlic.
Ingredients
- 4.5 cups Chicken Broth or Water
- 2 cups Lacinato Kale, chopped
- 1 cup Mushrooms, sliced
- 1 1/2 - 2 cups Rotisserie Chicken, shredded
- 1/2 Yellow Onion or White Onion, diced
- 3/4 cup Bubbies' Naturally-Fermented Sauerkraut
- 3/4 cup Celery, chopped
- 3/4 cup Carrots, chopped
- 5 Garlic Cloves, chopped or grated
- 1" Fresh Ginger, grated
- 2 Lemons, juiced
- 1 tbsp. Olive Oil
- 2 tsp. Ground Cumin
- 1 tsp. Salt
- 1 tsp. Black Pepper
Instructions
- In a large soup pot over medium high heat, add the olive oil to warm up for 1 minute.
- Add the chopped garlic, ginger, and onions to sauté until tender and fragrant, about 1-2 minutes.
- Add the chopped carrots, celery, kale, sauerkraut, and mushrooms to sauté for 4-5 minutes.
- Add the chicken broth and lemon juice, then stir in the ground cumin, salt, and black pepper.
- Stir in the shredded chicken.
- Bring to a boil, then simmer for 20-30 minutes, or until all vegetables are tender.
