Blueberry Ginger Thyme Mocktails (or Homemade Sodas)

With the juicy blueberries, a little kick from the fresh ginger, and earthy notes from the garden thyme... this is a simple syrup you'll want to keep on hand!

Ingredients

Servings: 8

For the Blueberry Ginger Thyme Simple Syrup:

  • 16 oz. Frozen or Fresh Blueberries
  • 1 cup Water
  • 3/4 cup Granulated Cane Sugar
  • 2" Fresh Ginger, grated or chopped into small pieces
  • 2 tbsp. Fresh Thyme Leaves
  • Juice of 1 Lemon

For a SINGLE Mocktail:

  • 6 oz Club Soda or Seltzer Water
  • 2-3 oz. Blueberry Ginger Thyme Simple Syrup
  • 1/2 cup Ice Cubes
  • Fresh Blueberries, for garnish
  • Fresh Thyme, for garnish

Instructions

For the Blueberry Ginger Thyme Simple Syrup:

  1. Combine all ingredients into a large saucepan over medium high heat. Bring to a boil then simmer on medium low for 10 minutes. After reducing the heat, mash the blueberries with a potato masher or fork. Set aside to cool to be at least room temperature.
  2. (Optional) Transfer the mixture to a food processor or blender to pulse 2-3 times. This helps the ginger taste to be more amplified.
  3. Strain the mixture into a jar. If desired, spoon some of the strained blueberry pulp into the simple syrup for extra flavor.
  4. Store in a glass jar with lid for up to 1 week in the fridge!

For the Mocktails:

  1. In a shaker or mason jar, combine the simple syrup and ice cubes. Shake to combine. Top with the club soda and stir.
  2. Garnish with fresh thyme, blueberries, and edible flowers to enjoy!
