Ingredients
Servings: 10 burger buns
- 1 cup Warm Water
- 10 grams Active Dry yeast, about 3 teaspoons
- 4 tbsp. Granulated Cane Sugar
- 1 tbsp. Fine Sea Salt
- 3 ½ - 4 cups All Purpose Flour
- 2 Eggs
- 1 Egg Yolk
- ¾ cup Softened Unsalted Butter, cubed
- Sesame Seeds, for garnishing
Instructions
- To Make the Dough: In the bowl of a stand mixer fitted with the paddle attachment, add the warm water, 2 tablespoons sugar, and yeast. Let the yeast activate for 15 minutes.
- In the meantime, combine 1 egg and the egg yolk in a small bowl. Beat until smooth.
- Add the flour, salt, and remaining sugar. Mix until a shaggy dough, then add the beaten eggs. Knead on LOW for 8-10 minutes, until a smooth dough.
- The First Rise: Add to a greased bowl, cover with a damp kitchen cloth or saran wrap, and set aside to proof in a warm environment for 1-2 hours, until doubled in size.
- Line a large baking pan with parchment paper.
- Punch down the dough, then transfer to a clean surface to divide into 10 equal pieces. Roll each piece into a tight ball. Place on the prepared pan.
- (Optional) Gently pat the tops if the dough balls are too high.
- The Second Rise: Cover to rise 30-40 minutes, until doubled in size.
- To Bake: Preheat the oven to 375F.
- Beat the remaining egg until smooth, then lightly brush on the tops of burger buns. Garnish with the sesame seeds.
- Bake for 12-15 minutes, rotating the pan halfway through, until tops are golden brown.
