My favorite ways to serve Finn Crisp Sourdough Rye Thins...

  • (Pre / Post Workout Snack) with sliced bananas, peanut butter, and maybe some chocolate ;)
  • (Savory Snack) with pesto, canned tuna, and cherry tomatoes
  • (Savory Snack) with a little marinara and grated cheese for mini pizzas
  • (Savory Snack) with avocado and smoked salmon
  • (Sweet Snack) with cookie butter and fresh raspberries
  • (Sweet Snack) with peanut butter and jam

Fun ways to add Finn Crisp to lunch / dinner recipes...

  • Sandwiches! (While I love adding crackers and chips inside my sandwiches, you can always replace the "bread" with the Finn Crisp "thins" for a low carb, low calorie alternative.)

What is Finn Crisp?

The Finn Crisp story goes back to 1952 during the Helsinki Summer Olympic Games. It was the first introduction of their thin, delicate rye crisps to the public (even though their crisp bread baking tradition goes back many years prior to that). Today, they are most known for their classic wholegrain rye recipe that is baked with sourdough and has a rich rye taste for crunchy, delicious cracker.

Ingredients

Servings: 4

For the fig balsamic sauce:

  • 2 tbsp. Traditional Balsamic Vinegar
  • 2 tbsp. Fig Preserves
  • 1 tbsp. Olive Oil
  • Salt & Black Pepper, to taste

For the sandwich:

  • 1 7-oz package Finn Crisp Sourdough Rye Thins
  • 8 slices of Sourdough Bread, or 2 Baguettes
  • 1 8-oz. Mozzarella Ball
  • 2 medium ripe Tomatoes, sliced
  • Fresh Basil
  • Bib Lettuce, or Arugula
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Salt

Instructions

  1. In a small bowl, mix all the ingredients for the fig balsamic sauce until well combined. Set aside.
  2. On half of the sourdough bread slices, add a generous spread of the fig balsamic sauce.
  3. Add a layer of lettuce, then 1-2 tomato slices seasoned with salt and black pepper.
  4. Add 2-3 sourdough rye thins, cracked in half, followed by 1-2 slices of mozzarella.
  5. Finish with a layer of fresh basil and top off with another bread slice. Enjoy!
