Imagine a scone and chocolate chip cookie meet, making the most beautiful breakfast treat made from leftover oatmeal! It's fluffy, chewy, chocolate-y. It's everything you could've dreamed of for breakfast on-the-go!

How to make cookies with leftover oatmeal?

  • Mix together the flour and baking powder.
  • In a separate bowl, whisk together the brown sugar and eggs until creamy. Fold in the leftover oatmeal.
  • Add the flour mix, oatmeal mix, and any chocolate chips or add-ins.
  • Fold together with a spatula or wooden spoon until well-incorporated. It will be a sticky dough but it's okay to have a few small dry lumps.
  • Use 1-2 oz cookie scooper of dough per cookie.
  • Bake at 350F for 12-15 minutes.

Will they taste the same as regular oatmeal cookies?

Here's the catch... they are more of a scone meets chocolate chip cookie AND IT'S SO YUMMY. But texture-wise, they won't be chewy and crispy like they would if you used dry rolled oats. And if curious, the difference in texture is caused by the oats having absorbed water. Sceince, man! 😂

Ingredients

Servings: 12-15 cookies

  • 2 cups All Purpose Flour
  • 1 1/2 tsp. Baking Powder
  • 1 cup Proper Good Ready Oatmeal (Fully Cooked)
  • 2 Eggs
  • 1/3 cup Brown Sugar
  • 1/2 cup White Chocolate Chips
  • 1/4 cup Blueberries, frozen or fresh (optional)

Instructions

  1. Preheat oven to 350F. Line a baking pan with parchment paper.
  2. In a large bowl, whisk together the flour and baking powder.
  3. In a separate bowl, beat the eggs and sugar together until creamy.
  4. Stir in the oatmeal, chocolate chips, and (optional) blueberries.
  5. Add the flour mix into the bowl, then fold together with a wooden spoon or spatula until well-combined. (It will be sticky batter).
  6. With wet hands, form your cookies and place on the prepared baking pan.
  7. Bake for 12-15 minutes, or until just set and lightly golden brown on the edges.
