Ingredients

Servings: 12

  • 1/2 cup Creamy Peanut Butter
  • 1 tbsp. Milk
  • 2/3 cup Almond Flour
  • 3 tbsp. Purecane Confectioners Sweetener
  • 1/8 tsp. Fine Sea Salt
  • 1/8 tsp. Baking Soda
  • 1/3 cup Melted Chocolate, for decorating
  • 12 Peanut Butter Cups, for decorating
  • 24 Candy Eyes, for decorating

Instructions

  1. Preheat oven to 325F. Line a cookie sheet with parchment paper.
  2. In a large bowl, mix the almond flour, confectioners sweetener, baking soda, and salt together.
  3. Add in the peanut butter and milk. Fold together until well combined.
  4. Using two tablespoons dough per cookie, place the cookies on the prepared pan. Gently press down a peanut butter cup in the center of each cookie to create a little well in the center. Remove the peanut cups until after baking.
  5. Bake for 8-10 minutes, or until set and lightly golden.
  6. While still warm, add the peanut butter cups into the center of each cookie. Cool completely.
  7. Once cooled, use the melted chocolate to pipe 4 ‘legs’ on each side of the peanut butter cup. Pipe a little chocolate on the back of the candy eyeballs then add the center of the peanut butter cup. Repeat with remaining cookies. Enjoy!
