These KETO Sheet Pan Cheddar Sausage Biscuits are every brunch lovers dream, they’re shockingly easy to make and full of flavor in every bite!

What is the KETO diet?

A little disclaimer: I am not on the KETO diet, or ay diet for that matter. I truly believe in eating intuitively and listening to your body; however, I respect others on these diets and want to make sure I'm always creating recipes to fit everyone's needs!

The Ketogenic diet (aka KETO) is a low carbohydrate, fat-rich eating plan that has been used for centuries to treat specific medical conditions. But it also means cutting out sugar... whaaaat?! Not possible, right? Well, this is where Purecane's All-Natural Sweeteners come into play. They taste and act just like regular sugars, but are zero-calorie and keep you with the Ketogenic recommendations.

And even though I don't stick to a KETO diet, I still LOVE using their zero-calorie sweeteners! They're perfect in keeping sweets light and guilt-free ;)

How to make KETO Cheddar Sausage Biscuits?

  1. Preheat oven to 425F. Line a 10x15” (or thereabouts) rimmed sheet pan with parchment paper.
  2. Add the olive oil to a skillet over medium high heat. Add the ground sausage and cook until browned. Set aside to cool.
  3. In a large bowl, mix the almond flour, baking sweetener, baking powder, baking soda, and salt together. Add the cubed butter and use your fingers to mix until crumb-like texture.
  4. Add the beaten eggs, buttermilk, shredded cheddar, browned sausage, and chopped herbs. Mix just until combined.  
  5. Add the biscuit batter to the prepared pan and lightly pat it down to an even layer.
  6. Use a knife to slice individual square biscuits. Keep in mind, you are not separating the biscuits but mainly scoring them.
  7. Brush with more olive oil and bake for 12-15 minutes, until golden brown on top and a toothpick inserted into the center comes out clean.

How to store and reheat leftovers biscuits?

Store leftover biscuits in an airtight container on the counter (at room temperature) for regular biscuits, or in the fridge for biscuits made with meats (such as this recipe). They will last up to 4 days.

To help keep the leftover biscuits moist, you can brush a little bit of melted butter or olive oil onto the biscuits, individually wrap in foil, then bake at 350F for 6-8 minutes (or until warmed through).

Ingredients

Servings: 12

  • 2 ½ cups Blanched Almond Flour
  • 2 tbsp. Purecane Baking Sweetener
  • 2 tsp. Baking Powder
  • ½ tsp. Baking Soda
  • ¼ tsp. Salt
  • 4 tbsp. Unsalted Butter, cold and cubed
  • 2 large Eggs, lightly beaten
  • ¼ cup Buttermilk
  • ½ cup Shredded Cheddar Cheese
  • ½ lb. Ground Sausage
  • 1 tbsp. Olive Oil
  • ¼ cup Chives or Parsley, chopped

Instructions
