A breakfast board is simply a variety of breakfast favorites, but today we're also throwing in some of the fluffiest high protein, low carb breakfast staples that will make this board a favorite for all! So without further ado, let's learn How to Build An Easy Breakfast Board (with KETO Waffles & High Protein Pancakes) !!

What is the KETO diet?

A little disclaimer: I am not on the KETO diet, or ay diet for that matter. I truly believe in eating intuitively and listening to your body; however, I respect others on these diets and want to make sure I'm always creating recipes to fit everyone's needs! :)

The Ketogenic diet (aka KETO) is a low carbohydrate, fat-rich eating plan that has been used for centuries to treat specific medical conditions. But it also means cutting out sugar... whaaaat?! Not possible, right? Well, this is where Purecane's All-Natural Sweeteners come into play. How to make a breakfast board?

  • Gather your supplies: Base/board, small serving dishes, utensils, glass dispenser for maple syrup, etc.

Ingredients

KETO Almond Flour Waffles (makes 6-8)

  • 2 cups Almond Flour, finely ground
  • 1/2 cup Whole Milk, or milk of choice
  • 3 large Eggs
  • 3 tbsp. Purecane Baking Sweetener
  • 2 tbsp. Water
  • 2 tsp. Vanilla Extract
  • 1 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 2 tbsp. Butter (melted) or Olive Oil, for waffle maker

High Protein, Low Carb Pancakes (makes 4-6)

  • 2/3 cup Almond Flour, finely ground
  • 2 oz. Cream Cheese
  • 2 large Eggs
  • 3 tbsp. Purecane Baking Sweetener
  • 1 tbsp. Water
  • 2 tsp. Vanilla Extract
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt

Instructions

KETO Almond Flour Waffles

  1. Warm up your waffle maker.
  2. In the meantime, whisk the almond flour, baking sweetener, baking soda, and salt until well-combined.
  3. In a separate bowl, mix the eggs, water, milk, and vanilla extract until smooth.
  4. Fold in the flour into the egg mixture until batter is smooth.  
  5. Brush the warm waffle maker with the melted butter or olive oil.
  6. Pour 1/4-1/3 cup batter per waffle.
  7. Cook until fluffy and golden brown, about 3-5 minutes.
  8. Repeat with remaining batter. Enjoy warm!

High Protein, Low Carb Pancakes

  1. Heat a nonstick skillet over medium heat.
  2. In the meantime, add all ingredients to a blender. Blend until the batter is smooth.
  3. Use 1/4 cup batter per pancake, flipping once you start to notice tiny bubbles. The pancakes should turn out golden brown on each side.
  4. Repeat with remaining batter. Enjoy warm!
