Savory puff pastry tarts baked until flaky and crunchy with grated cheese and salted heirloom tomatoes... These Heirloom Tomato Pizza Puff Pastry Tarts are an easy, yet elegant appetizer ready in just 30 minutes!
Ingredients you'll need:
1 sheet Frozen Puff Pastry, thawed
1 1/2 - 2 cups Spicy Cheddar, grated, or cheese of choice
2 Heirloom Tomatoes, thinly sliced
1/4 cup Fresh Basil, chopped
Salt & Black Pepper
How to Make Savory Puff Pastry Tarts:
Preheat oven to 400F. Line a large baking pan with parchment paper.
Add the thinly sliced tomatoes to a paper towel lined plate or tray, season generously with salt, then let sit to draw out any moisture for 5-10 minutes. Pat both sides as dry as you can with paper towels.
Slice the puff pastry into 6-8 squares, depending on how large the puff pastry sheet is.
Poke the centers with a fork.
Evenly distribute the grated cheese, then add the salted tomato slices that have been pat dry.
Bake for 20-25 minutes, rotating the an halfway through baking, until puffed up and deeply golden.
Garnish with freshly chopped basil and black pepper to enjoy!

How to Reheat Leftover Puff Pastry Tarts?
Reheat any leftovers in the oven at 400F for 5-6 minutes, until flaky and warmed through. I recommend reheating on a baking rack over a pan to help circulate the heat until the pastry.
