Here's the thing, I'm a huuuuuge taco fan. Beef, chicken, vegan-style... you name it and I'm for it! But with that said, I've also built up a palette for knowing what differentiates a "good" taco from an "amazing" taco. And this has been a recipe, I've tried one too many times to perfect so that I could eventually share with you all. So without further ado, let me introduce you to your new favorite taco recipe: Easy Chipotle Chicken Tacos.

What makes these tacos different from other chipotle taco recipes?

One simple word: Purecane.

Oh! And a simple combination of other all-natural flavors like lime juice and cilantro ;)

Easy Chipotle Chicken Tacos

This quick and easy weeknight meal is full of flavor and perfect for a crowd!

Ingredients

Servings: 4

  • 1 tbsp. Olive Oil
  • 1 lb. Chicken, about 2 skinless and boneless chicken breasts
  • 1 tsp. Chili Powder
  • 1 tsp. Ground Cumin
  • 1 tsp. Smoked Paprika
  • 1 tbsp. Purecane Brown Sweetener
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 2 Chipotle Peppers, chopped
  • 2 tbsp. Adobo Sauce, from the chipotle peppers
  • Juice of 2 Limes
  • Corn Tortillas, warmed
  • Guacamole
  • Pico De Gallo, homemade or store-bought
  • Pickled Red Onions, for serving
  • Jalapenos, for serving
  • Lime Wedges, for serving

Instructions

  1. Preheat oven to Roast 425F.
  2. In a small bowl, mix the spices (chili powder, ground cumin, smoked paprika, brown sweetener, salt, and black pepper). Set aside.
  3. In another bowl, mix the chopped chipotle peppers, adobo sauce, and lime juice. Set aside.
  4. Season the chicken breasts well with the homemade seasoning mix.
  5. Add the olive oil to a large skillet over medium high heat. Add the seasoned chicken into the hot skillet to pan sear 2-3 on each side, or until browned.
  6. Transfer the oven-safe skillet to roast for 15-20 minutes, or until fully cooked with internal temperatures of 165F.
  7. Let the chicken cool for at least 5 minutes before shredding into thick pieces. Toss with the adobo sauce mixture, then place back in the oven for 2-3 minutes.
  8. Serve with the warmed tortillas, guacamole, pico de gallo, and lime wedges. Other toppings to include are jalapenos and pickled red onions. Enjoy warm!
