My childhood is filled with bagel memories - morning runs rewarded with a bacon, egg, and cheese bagel sandwich for breakfast, a salted bagel with sun-dried tomato cream cheese during high school study breaks, a comforting blueberry bagel freshly out of the toaster after a not-so-fantastic day. Bagels will always be your friend!

Breakfast or dinner - my go to sandwich is a sliced tomato, fried egg, and tender collard greens or kale leaves that have been sautéed in lemon juice. Definitely worth the try!

Can bagels be frozen?

Absolutely! I actually just took some bagels out of the freezer the other day and they were delicious!

I recommend storing them in freezer-safe bags. Gently press out as much air as possible from the bag, since oxygen is what will make them lose their freshness. When properly stored, you can freeze your homemade bagels up to 3 months.

TIP: Slice each bagel horizontally (or as you would normally eat them), then freeze them.... By doing this, you can defrost them within minutes in the toaster!

Ah yes, the inevitable question regarding "carbs." When considering a balanced diet, the key is understanding that what most affects your health is the ingredients you feed your body. Most pre-made bagels in the grocery contain chemicals to preserve them longer or make them cheaper regarding costs. However, that is where the beauty of homemade bagels comes into play! You know exactly what ingredients your are eating and can even sneak a few additional nutrients into the bagels, such as flaxseed meal, hemp seeds, chia seeds, etc.

Using more easily digestible flours, such as sprouted grains like einkorn flour, and complex flours, like organic whole wheat, are simple additions to making a healthier bagel.

Ingredients

  • 2 1/2 cups Unbleached Bread Flour
  • 2 cups  White Whole Wheat Flour
  • 2 3/4 tsp. Active Dry Yeast, (a little more than a single packet)
  • 1 tbsp. Granulated Cane Sugar
  • 3/4 cup Frozen or Fresh Blueberries
  • 1 1/2 tsp. Kosher Salt
  • 1 1/2 cup Warm Water
  • 2-3 tbsp. White Sesame Seeds

Instructions

  1. In the bowl of a stand mixer, lightly whisk together the warm water, active dry yeast, and granulated cane sugar. Allow it to sit for 10 minutes, until foamy.
  2. Add in the flour, blueberries, and kosher salt. Mix on low speed for 3-4 minutes, until crumbly texture.
  3. Increase to medium speed and knead in the mixer for 4-5 minutes, until smooth and pliable.
  4. Transfer the dough ball to a lightly greased bowl, cover with plastic wrap, and set in a warm environment (such as oven with light on) for 1-2 hours, until the dough has doubled in size.
  5. Once risen, transfer the dough to a clean, lightly floured surface. Cut the dough into 8 even pieces, then roll eat piece into a ball, then shape into a bagel by pressing your thumb through the center. Gently cover the bagels with a kitchen towel to rest for 10 minutes.
  6. In the meantime, preheat the oven to 425F. Bring a large pot of water to a boil. Also, prepare a large baking pan with parchment paper.
  7. Reduce the water to a simmer, then add in 2-3 bagels at a time. Cook for 1 minute on each side. Transfer the bagels to the parchment paper with at least 1/2" space in between each.
  8. Brush each bagel with a little olive oil or a whisked egg white. Sprinkle with the sesame seeds.
  9. Bake on the top oven rack for 20-25 minutes, until golden brown.
  10. Allow the bagels to cool for at least 15 minutes, then enjoy!
