How do you get the cashews soft enough to blend?

The ticket is to soak them in hot water for 20-30 minutes, or you can soak them overnight in cold water. Both soaking options will turn out the same results, I just prefer the hot method since it's faster lol

What do I serve with cashew queso?

The options are endless!

  • grilled chicken tacos
  • slow cooked marinated chicken tacos

  • tortilla chips

Cashew Queso (Vegan & Dairy-Free)



  • 1 1/2 cups Roasted Cashews
  • 1 cup Almondmilk
  • 1/2 cup Nutritional Yeast
  • 1 Garlic Clove
  • 1 tbsp. Tomato Paste
  • 1 Lime, (juiced)
  • 1/2 tbsp. Hot Sauce
  • 1/2 tsp. Paprika
  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Salt


  1. Soak the cashews in warm water for 20-30 minutes, or until soft.
  2. Drain the cashews and add into a high speed blender. Add the remaining ingredients, then blend until smooth and creamy. Warm up on the stovetop and enjoy!
