(Air Fryer) Lemon Ricotta Stuffed French Toast
Lemon ricotta stuffed brioche french toast that’s been brulêed, inspired by the iconic Hong Kong French toast for that beautiful crunch!
Ingredients
Servings: 6-8
- Equipment: Cosori Turboblaze Air Fryer
- 1 loaf Challah or Brioche Bread
- 15 oz. Ricotta Cheese, about 1 ½ cups
- Zest of 1-2 Lemons
- ¼ cup Honey
- 2 large Eggs
- 1 ½ cups Whole Milk
- 2 tsp. Vanilla Extract
- ¼ cup Sugar, for the bruleed tops
- ¼ cup Melted Butter
- Fresh Whipped Cream, for serving
- Fresh Raspberries, for garnishing
Instructions
- Slice the brioche bread into 3-4” large pieces. Create a pocket-like slit in the centers of each slice for the filling. Set aside.
- In a large bowl, whisk the eggs, milk, and vanilla together. Dredge the brioche bread pieces in the mixture to soak for 10-20 seconds. Set aside.
- In a blender or food processor, combine the ricotta, lemon zest, and honey. Add a pinch of salt to taste (optional). Pulse until smooth.
- Fill each soaked brioche slice with the ricotta filling, then place in your air fryer basket. You may need to work in small batches of 2-3 pieces at a time.
- Brush or spoon on the melted butter.
- Bake at 400F for 10-12 minutes, flipping halfway through, until deeply golden.
- In the last half of baking, spoon on the sugar for the bruleed topping, or use a kitchen torch afterwards.
- Enjoy warm with the freshly whipped cream and raspberries!
