Tossed Caprese Salad with Superfood Pasta
- 1 bag (17.5oz) Batistini Farms Ancient Tuscan Grain Campanelle Superfood Pasta
- 8 oz Ciliegine Mozzarella, (halved)
- 1/2 pint Cherry Tomatoes, (halved)
- 1 cup Fresh Basil Leaves, (chopped)
- 2 tbsp. 100% Extra Virgin Olive Oil
- (optional) 2 tbsp. Traditional Balsamic Vinegar
- Salt & Black Pepper, (to taste)
- Bring a large pot of salted water to a boil, then cook the pasta according to package directions, about 12 minutes.
- Drain the pasta, then toss in the olive oil. Transfer to a large serving bowl, then add in the halved cherry tomatoes, halved mozzarella balls, and chopped basil. Toss to combine. Add salt and black pepper, to taste.
- For added flavor, drizzle with a traditional balsamic vinegar. Enjoy!
