(No Bake) Strawberry Fudge Brownie Bars (Vegan, Dairy-Free)
With only 7 ingredients to make, these no bake brownies are vegan, dairy free, but oh so fudgy!

- 9.54-oz (1 Box) Nature’s Bakery Double Chocolate Brownie Bars
- 1 cup Semisweet or Milk Chocolate, coarsely chopped
- ¾ cup Full Fat Coconut Milk (mainly the white part)
- 1/3 cup Vegan Butter, at room temperature
- ¼ cup Strawberry Puree (about ½ cup fresh strawberries pureed or substitute with strawberry jam)
- 3 ½ - 4 cups Powdered Sugar
- 1-2 tsp. Coconut Milk, or milk of choice
Instructions
- Heat up the coconut milk over medium high heat until steamy, about 2-3 minutes.
- Add the coarsely chopped chocolate to a small bowl. Pour the hot coconut milk over the chocolate so it covers all of it. Let sit for 1 minute, then whisk until smooth.
- Cover and let cool in the fridge while you make the frosting.
- In the bowl of a stand mixer, beat the butter until smooth, about 1 minute.
- Add the strawberry puree and beat 1 more minute.
- Add the 3 ½ cups powdered sugar. Beat on low speed until incorporated, then increase speed on HIGH to beat until smooth. Add the coconut milk and more powdered sugar until it reaches your preference.
- Line a large plate or small baking pan with parchment paper.
- Remove the brownie bars from their packaging and place side-by-side on the parchment in a square-like shape.
- Add the frosting evenly over the brownie bars, followed by the chocolate ganache.
- Place in the fridge to sit for at least 30 minutes before slicing. The longer they initially sit, the more fudge-like they become – yum!
- Keep leftovers stored in the fridge to snack on later. Enjoy!
