Mini Hot Honey Fried Chicken Biscuits Appetizer

Buttermilk biscuits that's flaky. Fried Chicken that's crispy on the outside, juicy on the inside, and brushed in a hot honey sauce. What more could you ask for?!

Ingredients

Servings: 12-14

For the Fried Chicken:

  • BUBBL’R Cherry Guava Blend’r Antioxidant Sparkling Water
  • 1 ½ lb. Chicken Breasts, boneless & skinless
  • 1 ½ cups Buttermilk
  • 2 cups All Purpose Flour
  • ½ cup Honey
  • ½ cup Hot Sauce
  • 1 tbsp. Baking Powder
  • 1 tsp. Italian Herb Seasoning
  • 1 tsp. Garlic Powder
  • Neutral Oil, for frying

For the Biscuits:

  • 2 cups All Purpose Flour
  • 1 tbsp. Baking Powder
  • ¼ tsp. Baking Soda
  • 2 tsp. Sugar
  • 1 tsp. Salt
  • 6 tbsp. Cold Butter, grated or sliced into cubes
  • ¾ cup Buttermilk

Instructions

For the Fried Chicken:

  1. Slice the chicken into bite-sized pieces, about 2-3” wide. Place into an airtight container or plastic bag. Pour the buttermilk on top and seal tight. Set in the fridge for at least 1 hour.
  2. Add enough neutral oil to a large pot to be 3-4” deep. Heat the oil to 350F.
  3. In a large bowl, mix the flour, seasoning, garlic powder, and baking powder together.
  4. Using a slotted spoon, dredge the chicken through the flour mixture to coat well. Place on a separate plate.
  5. Fry the chicken in small batches until golden brown on both sides, about 3-5 minutes.
  6. In a separate bowl, whisk the honey and hot sauce together. Generously brush the chicken in the sauce.
  7. (If needed to keep warm and crispy: Place a baking rack on top of a baking pan. Place the chicken on the baking rack. Place in the oven at 250F to keep warm up to 25 minutes.)

For the Biscuits:

  1. Preheat oven to 450F. Line a baking pan with parchment paper.
  2. Mix the flour, baking powder, baking soda, sugar, and salt together.
  3. Add the grated butter. Use a fork or your hands to mix until crumb-like texture.
  4. Add the buttermilk and mix until a moist dough.
  5. Roll out the dough on a lightly floured surface to ½” thick. Use a 2” cookie cutter or glass to cut the biscuits. Place on the prepared baking pan.
  6. Bake for 8-12 minutes, until golden brown on top.
  7. To Assemble: Slice the biscuits in half lengthwise, add a fried chicken nugget, then the top half of the biscuit. Serve warm with pickles.
